Monday’s call for Red Beans & Rice!


On the very first evening of trek, participants gather around a steaming pot of Red Beans and Rice; what might look like a quick and easy trail dinner, is a classic Louisiana dish that carries far more meaning than just a meal.


On Sundays, family dinners typically consisted of ham. The leftover ham bone was still usable on Monday and thrown into the pot with dried red kidney beans. Since Monday was traditionally wash day, the red beans and ham bone were able to slowly cook all day, while housework was being completed.


 Simmering on low for many hours, the ham bone and red beans, usually coupled with the ‘holy trinity’ of green bell peppers, onions, and celery, create a low-maintenance, delicious home cooked meal. Served over rice, and often accompanied with corn bread or smoked sausage, this hearty dish meant that a long day was coming to a close.


This Louisiana staple was born from practicality and patience. Over time, it became a symbol of comfort, community, and the start of a fresh week.

For us, Red Beans and Rice marks the beginning of something special: a great week ahead and the official kickoff to an unforgettable Swamp Base trek.
